  • 1 ¾ cups flour

  • ¼ teaspoon ginger
  • ½ teaspoon nutmeg
  • ½ cup granulated sugar
  • ¼ cup plus 2 teaspoons brown sugar (light or dark, packed)
  • ¼ cup apple butter or applesauce
  • 2 eggs
  • ¼ teaspoon vanilla
  • 3 tablespoons butter (melted, for coating)
  • ¼ cup sugar (for coating)
  • ½ teaspoon cinnamon (for coating)

  • 1 ¼1 ½ cups powdered sugar (sifted, for Bourbon Caramel Buttercream)
  • 2 tablespoons plus 2 teaspoons caramel sauce (for Bourbon Caramel Buttercream)

  • 4 ½ ounces cream cheese (for Brown Sugar Cream Cheese Icing)
  • 3 tablespoons butter (for Brown Sugar Cream Cheese Icing)
  • 2 tablespoons brown sugar (light or dark, for Brown Sugar Cream Cheese Icing)
  • 2 cups powdered sugar (sifted, for Brown Sugar Cream Cheese Icing)
  • ½ teaspoon vanilla extract (for Brown Sugar Cream Cheese Icing)
  • 1 pinch salt (for Brown Sugar Cream Cheese Icing)

Instructions

  1. Preheat oven to 350°F (175°C). Reduce apple cider in a saucepan until down to 1/4 cup; set aside to cool.
  2. In a bowl, sift together flour, baking powder, baking soda, salt, and spices.
  3. In another bowl, beat butter with sugars until creamy. Mix in eggs one at a time, followed by vanilla and cooled cider/applesauce.
  4. Gradually add dry ingredients until just combined.
  5. Drop mounds of dough onto lined baking sheets and bake for 11-13 minutes. Cool on racks and brush with melted butter before coating in cinnamon sugar.
  6. Fill cooled cookies with your choice of icing.
