  • 23 teaspoons Cajun seasoning
  • 1 tablespoon avocado oil
  • 8 tablespoons unsalted butter
  • ½ cup all-purpose flour
  • 1 large onion
  • 1 green bell pepper
  • 1 red bell pepper
  • 2 stalks celery
  • 5 green onions
  • 6 cloves garlic
  • 3 cups chicken broth (warmed)
  • ¼ cup parsley leaves (for garnish)
  • Cooked white rice (for serving)

Instructions

  1. Finely chop all vegetables and season chicken thighs with Cajun seasoning.
  2. In a large skillet, heat avocado oil over medium-high heat and sear the seasoned chicken thighs until browned. Set aside.
  3. In the same skillet, lower the heat to medium and melt butter. Whisk in flour to create a roux, cooking until it reaches a medium brown color.
  4. Add chopped vegetables to the roux and sauté until softened; then stir in minced garlic.
  5. Gradually whisk in warm chicken broth and return seared chicken to the pan. Simmer for about 30 minutes until thickened.
