  • 2 salmon fillets (150-180g each)
  • 1 tsp Cajun seasoning
  • 2 cups baby potatoes, halved
  • 2 cloves garlic, minced
  • 1 bunch asparagus, trimmed
  • 1 cup shredded mozzarella cheese
  • 3 tbsp olive oil
  • Salt and black pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, toss halved potatoes with olive oil, minced garlic, salt, and pepper. Spread on a baking tray and roast for 25-30 minutes until golden brown.
  3. Prepare asparagus by placing it on a separate tray; drizzle with olive oil, season with salt and pepper. Bake for 12-15 minutes; add cheese in the last 5 minutes to melt.
  4. Season salmon fillets with Cajun seasoning and olive oil; bake or pan-sear for 12-15 minutes until cooked through.
  5. Assemble the dish by plating crispy potatoes, cheesy asparagus, and seasoned salmon. Garnish with fresh parsley.
