  • ¾ cup all-purpose flour
  • ½ cup cornstarch
  • 1 large egg
  • 2 cups panko breadcrumbs
  • 1 cup mayonnaise
  • ½ cup Thai sweet chili sauce
  • 1 teaspoon Sriracha
  • 2 tablespoons honey
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ⅛ teaspoon cayenne pepper (optional)
  • Canola oil (for frying)
  • Parsley (chopped, for garnish)

Instructions

  1. In a mixing bowl, whisk together mayonnaise, Thai sweet chili sauce, Sriracha, and honey for the sauce; set aside.
  2. Marinate chicken in buttermilk for at least 10 minutes.
  3. Prepare a breading station: one bowl with flour mixed with garlic powder, salt, pepper, and cayenne; another with whisked egg and Sriracha; and a third with panko breadcrumbs.
  4. Coat each chicken tenderloin in flour, dip in the egg mixture, then coat thoroughly with panko.
  5. Heat canola oil in a deep frying pan over medium heat. Fry chicken in batches for about 3-4 minutes on each side until golden brown.
  6. Drain on paper towels, drizzle with sauce or serve on the side. Garnish with chopped parsley if desired.
