  • 2 ounces cream cheese (room temperature)
  • 7 tablespoons unsalted butter (melted)
  • 1/4 cup fruit juice (as a bourbon substitute)
  • 1 large egg
  • 1 1/2 teaspoons pure vanilla extract
  • 8 ounces toffee chips
  • 1/2 cup pecan pieces (chopped small)

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, beat the cream cheese and granulated sugar until smooth. Add the melted butter, fruit juice, egg, and vanilla extract; mix well until creamy.
  4. Gradually add the dry ingredients to the wet mixture until just combined. Fold in the toffee chips and chopped pecans.
  5. Refrigerate the dough for at least two hours.
  6. Scoop dough onto the prepared baking sheet about two inches apart.
  7. Bake for 12 – 15 minutes or until golden. Cool on the baking sheet briefly before transferring to a wire rack.
