  • 2 tsp garlic powder
  • 1 tsp salt
  • 1 tsp active dry yeast
  • 1 Tbsp olive oil (plus more for greasing)
  • 1/2 tsp squid ink
  • 4 oz button mushrooms
  • 2 Tbsp butter
  • 1/2 cup shallots (or red onion)
  • 45 cloves garlic
  • 2 Tbsp cooking apple juice
  • 1 cup jarred pesto sauce

Instructions

  1. In a mixing bowl, combine bread flour, garlic powder, salt, and active dry yeast. Create a well in the center and add olive oil and squid ink.
  2. Gradually pour in warm water while stirring until dough forms.
  3. Knead on a floured surface for 5-7 minutes until smooth. Place in an oiled bowl, cover, and let rise for 30 minutes.
  4. While rising, sauté shallots in butter until translucent; add garlic and mushrooms until browned.
  5. Preheat oven to 450°F (230°C). Roll out risen dough into rounds, spread pesto on top, and layer with mushroom mixture.
  6. Bake on parchment-lined baking sheet for about 15-20 minutes or until golden brown.
