  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In one bowl, whisk together cocoa powder, flour, baking powder, and salt. In another bowl, combine melted butter, eggs, vanilla extract, and granulated sugar until well mixed.
  3. Gradually add the dry ingredients to the wet mixture and stir in optional chocolate chips.
  4. Scoop rounded spoonfuls of brownie batter onto the prepared sheets, spacing them two inches apart.
  5. Bake for 15-20 minutes until edges are set but centers remain slightly soft. Cool on wire racks.
  6. For the filling, cream softened butter with both sugars until fluffy. Mix in vanilla extract and gradually add flour and salt; fold in chocolate chips.
  7. Once the brownie cookies are cool, spread cookie dough filling on one side of each cookie and sandwich them together.
  8. Refrigerate assembled cookies for about 30 minutes if you prefer a firmer filling.
