  • 1 large burrata ball (or 2 small)
  • 45 ripe plums, halved and pitted
  • 1 cup pistachios, chopped
  • 2 tbsp extra virgin olive oil
  • 23 sprigs fresh thyme (leaves only)
  • Sea salt, to finish
  • Cracked black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place halved plums cut-side up on a lined baking tray. Drizzle with olive oil.
  3. Roast in the oven for 20-25 minutes until soft and caramelized.
  4. Allow the plums to cool slightly.
  5. On a serving plate, place the burrata in the center and arrange roasted plums around it.
  6. Top with chopped pistachios and thyme leaves, drizzle with more olive oil, and season with sea salt and cracked black pepper.
  7. Serve immediately with toasted sourdough or artisan crackers.
