  • 12 oz linguine pasta
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 teaspoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the linguine in salted boiling water until al dente (9–10 minutes). Reserve ½ cup pasta water, then drain.
  2. In a skillet, heat olive oil and butter over medium-high heat. Sear chicken chunks seasoned with Cajun spices until golden brown (8–10 minutes). Remove and set aside.
  3. In the same skillet, sauté minced garlic in butter until fragrant. Add cream and milk; bring to a simmer before stirring in Velveeta until melted.
  4. Add mozzarella and Parmesan; mix until creamy. Adjust thickness with reserved pasta water if needed.
  5. Toss cooked linguine in the sauce, then plate with Cajun chicken bites on top.
