  • 1 ¾ cups heavy cream
  • 1 cup mascarpone cheese
  • ⅓ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 ½ cups strong brewed espresso (cooled)
  • 1 package (about 7 oz) ladyfinger cookies
  • 1 ½ cups cherry preserves
  • ½ cup fresh cherries (pitted and halved)
  • Unsweetened cocoa powder (for dusting)

Instructions

  1. In a large bowl, whip the heavy cream until soft peaks form. Add mascarpone cheese, powdered sugar, and vanilla extract and continue whipping until smooth and fluffy.
  2. In a shallow dish, combine cooled espresso with almond extract mixed with water (as an amaretto substitute).
  3. Quickly dip each ladyfinger into the espresso mixture and line them in a 9×9-inch dish.
  4. Spread half of the mascarpone mixture over the ladyfingers. Spoon half of the cherry preserves evenly on top and add fresh cherry halves.
  5. Repeat with another layer of dipped ladyfingers followed by remaining cream and cherry mixture.
  6. Cover and refrigerate for at least 6 hours or overnight before serving.
  7. Dust with cocoa powder and garnish with fresh cherries before slicing.
