  • 1 1/2 pounds boneless chicken breasts or thighs, thinly sliced
  • 2 tablespoons smoked paprika
  • 2 teaspoons chili powder or Tajin
  • 2 teaspoons cumin
  • Kosher salt and black pepper
  • 3 cloves garlic, chopped
  • 1 yellow onion, sliced
  • 3 bell peppers, sliced
  • 34 cups cooked rice
  • 3 cups grilled corn kernels
  • 1/2 cup crumbled cotija cheese
  • Shredded lettuce
  • Mashed/whipped avocado
  • Jalapeños
  • Cilantro
  • 1/3 cup extra virgin olive oil for vinaigrette
  • 1/3 cup salsa verde
  • 1/4 cup lime juice
  • 2 teaspoons spicy honey
  • 1/3 cup cilantro, chopped

Instructions

  1. Heat olive oil in a skillet over high heat. Add sliced chicken seasoned with smoked paprika, chili powder, cumin, salt, and pepper. Cook until seared and cooked through (about 8-10 minutes). Add chopped garlic in the last two minutes.
  2. In the same skillet, sauté sliced onions until fragrant (about 5 minutes), then add bell peppers and cook until tender.
  3. Combine the cooked chicken with the sautéed vegetables in the skillet.
  4. For the vinaigrette, mix olive oil, salsa verde, lime juice, spicy honey, cilantro in a glass jar; shake to combine.
  5. Assemble bowls by layering rice with chicken-pepper mixture and topping with lettuce, corn kernels, cotija cheese, avocado slices, jalapeños, and drizzled vinaigrette.
