  • 2 tbsp olive oil

  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. Heat olive oil in a skillet over medium heat; season chicken with salt, pepper, and thyme. Cook until golden brown on both sides.
  3. In the same skillet, sauté garlic for 1 minute, then add mushrooms and cook until softened. Stir in spinach until wilted.
  4. Add heavy cream and chicken broth to the skillet; simmer until slightly thickened.
