  • 1 red bell pepper
  • 1 carrot
  • 1 cup broccoli florets
  • 1 cup uncooked white rice (e.g., basmati or jasmine)
  • 1 tsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried herbs (or Italian seasoning)
  • Salt & pepper, to taste
  • 1 cup water
  • Pinch of salt

Instructions

  1. Rinse the rice under cold water. In a pot, combine the rinsed rice, water, and salt. Bring to a boil over medium heat, then cover and simmer on low for 12-15 minutes until fluffy.
  2. Heat olive oil in a wok over medium-high heat. Add chicken strips and cook for 5-6 minutes until golden brown.
  3. Stir in sliced carrots and bell pepper along with garlic powder, dried herbs, salt, and pepper; cook for another 3-4 minutes until veggies are tender-crisp.
  4. Steam broccoli florets in a steamer basket over boiling water for about 4-5 minutes until bright green.
  5. Serve the chicken stir-fry alongside fluffy rice and steamed broccoli.
