  • 1 chicken breast, cut into strips
  • 1 tsp olive oil
  • 1 zucchini, chopped
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 cup chopped onion
  • 1 tbsp low-sodium soy sauce
  • 1 tsp garlic powder
  • Salt & pepper, to taste
  • 1 cup cooked brown rice

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add chicken strips and cook for 6-8 minutes until browned and cooked through. Set aside.
  2. In the same skillet, stir-fry zucchini, broccoli, bell pepper, and onion for 5-7 minutes until tender-crisp. Add soy sauce and garlic powder; mix in the cooked chicken.
  3. Warm the cooked brown rice separately and fluff with a fork.
  4. Serve the stir-fry alongside the rice and add optional garnishes as desired.
