  • 1 small onion, diced
  • ½ cup bell pepper, diced
  • 3 cloves garlic, diced
  • 1 packet chili seasoning mix
  • 8 oz tomato sauce
  • 1 can kidney beans, drained
  • 2 cups macaroni (uncooked)
  • 1½ cups cheddar cheese (shredded)
  • ½ cup chicken broth
  • 1 tablespoon tomato paste
  • 14.5 oz can diced tomatoes (undrained)
  • 2 tablespoons butter
  • 2 tablespoons flour
  • ½ cup heavy cream
  • 1 cup milk
  • ½ teaspoon mustard powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon each: salt/pepper
  • ½ teaspoon hot sauce
  • Fresh parsley (to garnish)

Instructions

  1. In a large skillet over medium heat, brown the ground beef. Add the onion, bell pepper, and garlic; cook until softened.
  2. Stir in the chili seasoning mix, tomato sauce, and kidney beans. Simmer for about 20 minutes.
  3. Cook macaroni according to package instructions until al dente; drain.
  4. In another pan, melt butter and create a roux with flour. Gradually whisk in milk and heavy cream until smooth. Stir in spices and half the cheese until melted.
  5. Combine macaroni with chili mixture and cheese sauce; top with remaining cheese.
  6. Bake at 350°F for 15-20 minutes until bubbly.
