  • 250g all-purpose flour
  • 30g sugar (plus extra for syrup)
  • 10g fresh yeast
  • 3 large eggs
  • 165g unsalted butter
  • 25 cl whole milk
  • 1 vanilla pod
  • 2 egg yolks
  • 20g cornstarch
  • 120g mini chocolate chips

Instructions

  1. In a stand mixer, combine flour, sugar, salt, and crumbled yeast. Mix briefly.
  2. Add beaten eggs and knead until smooth. Gradually incorporate softened butter until dough is dense and sticky.
  3. Cover and let rise for about 2 hours until doubled in size.
  4. Prepare custard by heating milk with butter and vanilla pod; whisk egg yolks, sugar, cornstarch, and flour in another bowl. Combine gradually with hot milk and thicken on heat.
  5. Roll out dough, spread custard, sprinkle chocolate chips, fold, cut into rectangles, place on baking sheet, and let rise again for another 2 hours.
  6. Preheat oven to 350°F (180°C), brush with beaten egg mixture, bake for 10-12 minutes until golden brown.
  7. Prepare sugar syrup by boiling water with sugar until dissolved; brush over warm brioches.
