  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked rice (white or brown)
  • 1 can black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/2 cup red onion, diced
  • Extra cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Prepare the marinade by whisking together lime juice, olive oil, chopped cilantro, minced garlic, cumin, chili powder, salt, and pepper in a medium bowl.
  2. Marinate the flank steak in the mixture for at least 30 minutes (or up to 4 hours).
  3. Cook rice according to package instructions.
  4. Heat black beans in a saucepan until warm.
  5. Grill the marinated flank steak on medium-high heat for about 4–5 minutes per side until desired doneness is reached.
  6. Let the steak rest for 5–10 minutes before slicing against the grain.
  7. Assemble your bowl starting with rice, followed by black beans, corn, sliced steak, cherry tomatoes, avocado, and red onion.
