  • 1 tbsp coconut oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper, optional
  • 1 tbsp tomato paste
  • 1 (14 oz) can full-fat coconut milk
  • 1 cup beef broth

Instructions

  1. Heat coconut oil in a Dutch oven over medium-high heat. Sear the beef until browned on all sides. Remove and set aside.
  2. In the same pot, sauté the chopped onion, garlic, and ginger until softened.
  3. Add curry powder, turmeric, cumin, smoked paprika, cayenne pepper (if using), and tomato paste; stir for one minute until fragrant.
  4. Return the seared beef to the pot with coconut milk and broth; stir to combine.
  5. Bring to a gentle simmer, cover, and reduce heat to low. Cook for 2-3 hours until beef is tender.
