  • 2 lbs beef chuck, cut into cubes
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 1 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 1 tsp ground cumin
  • 1/2 tsp chili powder (optional)
  • Coconut milk (enough to cover beef)

Instructions

  1. Prepare all ingredients by chopping vegetables and measuring spices.
  2. In a large pot or Dutch oven, heat vegetable oil over medium-high heat. Sear beef cubes until browned on all sides; remove and set aside.
  3. In the same pot, sauté onions until translucent, then add garlic and ginger until fragrant.
  4. Stir in red curry paste, turmeric, cinnamon, cumin, and optional chili powder; cook for about 2 minutes.
  5. Return the beef to the pot and mix well to coat with spices.
  6. Pour enough coconut milk to cover the beef partially; bring to a simmer, cover, and reduce heat to low. Cook for 2-3 hours until beef is tender.
  7. Serve over rice or with bread.
