  • 2 cups frozen corn, thawed

  • 1 cup cherry tomatoes, halved

  • 1 cup diced cucumber

  • 1/2 cup red onion, finely chopped

  • 1/2 cup crumbled feta cheese

  • 1/4 cup mayonnaise

  • 1/4 cup sour cream

  • 1 tablespoon lime juice

  • 1 teaspoon garlic powder

  • 1 teaspoon chili powder

  • Salt and pepper, to taste

  • 1/4 cup fresh cilantro, chopped (optional)

Instructions

  1. Prepare the corn
    Thaw the frozen corn by running it under warm water in a colander. Drain well to remove any excess moisture. If using fresh corn, boil it briefly, cool, and cut the kernels from the cob.

  2. Combine salad ingredients
    In a large bowl, mix together the corn, cherry tomatoes, cucumber, red onion, and feta cheese. Stir gently to maintain the texture of the tomatoes.

  3. Make the dressing
    In a separate small bowl, whisk together the mayonnaise, sour cream, lime juice, garlic powder, chili powder, salt, and pepper until smooth and well combined.

  4. Toss the salad
    Pour the dressing over the corn mixture and toss gently to coat. If you’re using cilantro, fold it in at this point.

  5. Chill and serve
    Cover and refrigerate for at least 30 minutes before serving. This allows the flavors to meld and enhances the overall taste. Serve chilled or at room temperature.
