  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 tablespoon garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 9 oz cheese tortellini (fresh or refrigerated)
  • 1 cup heavy cream
  • 4 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • ¼ cup reserved pasta water (if needed)
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the tortellini in salted boiling water according to package instructions. Reserve ¼ cup of pasta water, then drain.
  2. Season the chicken with Cajun seasoning, Italian seasoning, salt, and pepper.
  3. In a skillet over medium-high heat, add olive oil and sear the chicken until golden brown on both sides. Remove from skillet.
  4. Reduce heat and add butter and garlic to the skillet until fragrant. Pour in heavy cream and stir in Velveeta until melted.
  5. Mix in mozzarella cheese until smooth.
  6. Add tortellini to the sauce, stirring gently to coat. If needed, adjust consistency with reserved pasta water.
  7. Return chicken to the skillet and simmer for about 12 minutes to heat through.
