8 oz penne pasta
1 lb boneless, skinless chicken breast
2 cups broccoli florets (fresh or frozen)
1 cup heavy cream
1 cup chicken broth
4 oz cream cheese
1 cup grated Parmesan cheese
1 cup shredded mozzarella
1 tbsp olive oil
2 tbsp butter
4 cloves garlic, minced
1 tsp Italian seasoning
Salt and black pepper, to taste
Crushed red pepper flakes (optional)
Fresh parsley, chopped (for garnish)
Instructions
Cook the penne pasta in salted boiling water until al dente. Add broccoli florets in the last two minutes of cooking. Drain and set aside.
In a skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper; cook until golden brown and cooked through. Remove from skillet.
In the same skillet, melt butter and sauté garlic until fragrant. Add heavy cream and chicken broth; mix in cream cheese until smooth.
Stir in Parmesan and mozzarella until melted and creamy. Season to taste.
Combine cooked pasta, broccoli, and chicken with the sauce; mix well.
Serve garnished with fresh parsley and extra Parmesan if desired.
