1.5 lbs boneless skinless chicken thighs
1 medium onion, finely chopped
3 garlic cloves, minced
1 cup baby spinach, chopped
1 tablespoon Dijon mustard
1 teaspoon smoked paprika
1 can (10.5 oz) condensed cream of mushroom soup
Salt and pepper to taste
Instructions
Chop the onion and mince the garlic; set aside.
In a slow cooker, layer the chicken thighs and top with onion, garlic, spinach, Dijon mustard, smoked paprika, salt, black pepper, and the cream of mushroom soup.
Cover and cook on low heat for about 6 hours until the chicken is tender.
