  • 2 tbsp vegetable oil or ghee
  • 1 large onion
  • 4 cloves garlic
  • 1 tbsp fresh ginger
  • 2 tbsp curry powder or garam masala blend
  • 1 tsp turmeric
  • 1 tsp ground cumin
  • 1 tsp cayenne
  • Salt and pepper to taste
  • 1 can (14 oz) coconut milk
  • 1 cup tomato puree
  • 1 cup chicken broth
  • Juice of lime
  • Fresh cilantro, chopped for garnish
  • Fluffy basmati rice

Instructions

  1. Heat a large skillet over medium heat and add vegetable oil or ghee.
  2. Sauté chopped onion until translucent (about 5 minutes), then add minced garlic and grated ginger; cook for another minute.
  3. Add spices (curry powder, turmeric, cumin, cayenne, salt, and pepper) and stir well for about 2 minutes.
  4. Increase heat to medium-high and add chicken pieces; cook until browned on all sides (about 6-8 minutes).
  5. Pour in coconut milk, tomato puree, and chicken broth; bring to a simmer and reduce heat to low. Cook uncovered for 20-25 minutes.
