  • 12 oz linguine pasta
  • 1 cup heavy cream
  • 1 cup Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, divided
  • 1 teaspoon red pepper flakes, optional
  • 1 tablespoon chopped parsley, optional, for garnish
  • 1/4 cup reserved pasta water, if needed

Instructions

  1. Season chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
  2. Heat olive oil and 2 tablespoons of butter in a large skillet. Sear seasoned chicken until golden brown and cooked through; top with Parmesan.
  3. Cook linguine according to package instructions; reserve pasta water before draining.
  4. In the same skillet, sauté minced garlic in remaining butter. Add heavy cream and Velveeta; simmer until smooth.
  5. Stir in mozzarella and grated Parmesan until melted and thickened; adjust with reserved pasta water if necessary.
  6. Toss cooked linguine in the sauce until well coated, then serve alongside the seared chicken.
