Crockpot Spicy Queso Beef Chili is the ultimate comfort food, perfect for warming up on chilly nights. This hearty dish features tender ground beef, a medley of spices, and creamy cheese that melds together beautifully as it cooks in the slow cooker.

  • 2 pounds ground beef (or ground turkey)
  • 2 yellow onions, chopped
  • 2 poblano peppers, seeded and chopped
  • 1 can (28 ounces) crushed fire-roasted tomatoes
  • 1 can (8 ounces) tomato paste
  • 1/3 cup hot sauce
  • 6 ounces cream cheese
  • 2 cups shredded cheddar cheese
  • 1 can mixed chili beans, drained
  • 2 tablespoons chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • 2 teaspoons ground cumin
  • 1/2 teaspoon cayenne pepper
  • 3 tablespoons salted butter
  • 2 bay leaves
  • Salt (to taste)
  • 23 cups chicken or beef broth
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup chopped green onions
  • Avocado and Greek yogurt, for serving

Instructions

  1. Brown the ground beef in a skillet over medium heat; drain excess fat.
  2. In a crockpot, combine browned beef, chopped onions, poblano peppers, crushed tomatoes, tomato paste, hot sauce, butter, bay leaves, spices, and broth. Stir well.
  3. Cover and cook on low for about two hours.
  4. Fifteen minutes before serving, stir in cream cheese until melted followed by shredded cheddar cheese until fully combined.
  5. Remove bay leaves before serving. Top with fresh cilantro, avocado slices, or Greek yogurt as desired.
