  • 1 cup warm whole milk
  • 1 large egg
  • 1 cup + 2 tbsp cold unsalted butter for laminating
  • 7 oz cream cheese, softened
  • 1/4 cup granulated sugar for filling
  • 1 tsp vanilla extract
  • Zest of 1 lemon (optional)
  • For glaze: 1 cup powdered sugar, 1–2 tbsp milk or lemon juice, and 1/2 tsp vanilla extract

Instructions

  1. In a large bowl, mix flour, sugar, and salt. In another bowl, combine warm milk and yeast; let sit until foamy. Add egg and yeast mixture to dry ingredients; knead until smooth and chill for 30 minutes.
  2. Prepare a butter block by pounding cold butter between parchment sheets into an 8-inch square; chill until firm.
  3. Roll dough into a square, place butter in the center, fold corners to seal, then roll into a rectangle. Fold into thirds like a letter, chilling between folds. Repeat twice.
  4. Roll dough to about 1/4-inch thickness, cut into squares, add cream cheese filling in the center, shape as desired.
  5. Proof on baking sheets for an hour; preheat oven to 390°F (200°C). Bake for 15–20 minutes until golden brown.
  6. Cool completely before glazing with powdered sugar mixed with milk or lemon juice.
