  • 1 1/4 cups buttermilk, room temperature
  • 2/3 cup vegetable or canola oil
  • 2 squirts of green gel food coloring
  • 2 tsp vanilla extract or vanilla bean paste
  • 1 tsp white vinegar
  • 1 1/2 cups unsalted butter, room temperature (for frosting)
  • 1/2 cup full-fat cream cheese, room temperature
  • 1 Tbsp vanilla extract or vanilla bean paste (for frosting)
  • 1 tsp fine salt (for frosting)
  • 8 cups powdered sugar
  • 2 Tbsp heavy whipping cream, room temperature

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together cake flour, cocoa powder, baking soda, and salt.
  3. In a separate bowl, beat the unsalted butter and sugar until fluffy. Add eggs one at a time, followed by buttermilk, oil, gel food coloring, vanilla extract, and vinegar. Mix until smooth.
  4. Gradually add dry ingredients to the wet mixture until just combined.
  5. Divide batter between the prepared pans and bake for about 28 minutes or until a toothpick comes out clean.
  6. Cool cakes in pans for 10 minutes before transferring them to wire racks.
