  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp garlic powder
  • Salt & pepper
  • Fresh parsley, chopped (for garnish)
  • 1 cup mushrooms, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, sliced
  • 1 clove garlic, minced
  • 3 medium potatoes, peeled and cubed
  • 2 tbsp butter
  • ½ cup milk

Instructions

  1. Boil cubed potatoes in salted water until tender (about 15 minutes). Drain and mash with butter and milk until creamy.
  2. In a skillet, heat olive oil over medium heat. Season chicken breasts with garlic powder, salt, and pepper; cook until golden brown (6-7 minutes per side). Remove from skillet.
  3. In the same skillet, sauté onions until translucent. Add peppers and mushrooms with minced garlic; season and cook until tender (5-7 minutes).
  4. Serve mashed potatoes topped with chicken and sautéed veggies; garnish with fresh parsley.
