  • 1012 medium shrimp, peeled & deveined
  • 1 cup broccoli florets
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 green bell pepper, diced
  • 2 tbsp butter
  • 1 cup milk
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • Salt & black pepper, to taste

Instructions

  1. Prepare the creamy mashed potatoes by boiling cubed potatoes until fork-tender. Drain, mash with butter and milk until smooth, and season with salt and pepper.
  2. Sauté the broccoli florets and diced peppers in olive oil over medium heat for about 4-5 minutes until tender yet vibrant.
  3. In a separate skillet, melt butter with olive oil, add minced garlic for fragrance, then cook the shrimp seasoned with paprika until pink.
  4. Serve creamy mashed potatoes on one side of the plate topped with sautéed veggies and shrimp.
