  • 1 pound ground chicken breast
  • ⅔ cup uncooked white rice
  • 1 small red onion (diced)
  • 2 cloves garlic (minced)
  • 1 zucchini (diced)
  • ½ cup cherry tomatoes (quartered)
  • ½ cup kalamata olives (chopped)
  • ½ cup feta cheese (divided)
  • 2 tablespoons fresh dill (chopped)
  • 1 tablespoon extra virgin olive oil
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 350°F. Cook the rice according to package instructions.
  2. Prepare the bell peppers by slicing them in half and removing seeds; place them cut side up in a baking dish.
  3. In a large skillet over medium heat, heat olive oil and cook ground chicken with salt and pepper until browned.
  4. Add diced onion, minced garlic, and zucchini; cook for an additional two minutes.
  5. In a mixing bowl, combine cooked rice with the chicken mixture, cherry tomatoes, olives, half of the feta cheese, and dill; mix well.
  6. Stuff each pepper with the filling and sprinkle remaining feta on top. Pour water into the baking dish to steam.
  7. Cover with foil and bake for 40 to 45 minutes. Squeeze fresh lemon juice over before serving.
