  • 1 boneless chicken breast
  • 1 medium sweet potato
  • 1 cup asparagus spears
  • Cucumber
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the sweet potato in half, season with olive oil, salt, and pepper, then place cut side up on a baking sheet. Roast for 30-35 minutes until tender.
  2. While the sweet potato roasts, rub the chicken breast with olive oil, garlic powder, paprika, salt, and pepper. Grill over medium-high heat for about 5-6 minutes on each side until cooked through. Slice thinly.
  3. In the last 10 minutes of roasting the sweet potato, sauté the asparagus and cucumber slices in olive oil until asparagus is tender-crisp.
  4. Assemble by placing sliced chicken, roasted sweet potato halves, sautéed asparagus, and cucumber in a bowl.
