  • 2 boneless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt & pepper
  • 1 cup brown rice
  • 2 cups water
  • Pinch of salt
  • 2 carrots, sliced into coins
  • 1 tsp olive oil
  • 1 tsp dried thyme or oregano
  • 3 tbsp mayonnaise
  • 1 tbsp Greek yogurt
  • 1 tsp fresh lemon juice
  • 1 tsp red chili flakes
  • Black pepper
  • Fresh parsley, chopped

Instructions

  1. Start by cooking the brown rice: In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of brown rice and a pinch of salt. Reduce heat to low, cover, and simmer for about 30-40 minutes or until soft and fluffy.
  2. While the rice cooks, prepare the chicken: Rub the chicken breasts with olive oil, garlic powder, smoked paprika, salt, and pepper. Preheat your grill or grill pan over medium-high heat. Grill each chicken breast for about 5-7 minutes on each side until fully cooked. Remove from heat and let rest before slicing.
  3. Next, sauté the carrots: In a frying pan over medium heat, add 1 tsp of olive oil. Add sliced carrots along with dried thyme (or oregano), salt, and pepper. Cook for about 5-7 minutes until they are tender-crisp.
  4. Prepare the creamy herb sauce: In a mixing bowl, combine mayonnaise, Greek yogurt, fresh lemon juice, red chili flakes, and black pepper. Mix until smooth and set aside.
  5. Finally, assemble your Grilled Chicken Rice Bowls: In serving bowls, layer cooked brown rice first. Add sliced grilled chicken on top followed by sautéed carrots. Drizzle generously with creamy herb sauce. Garnish with freshly chopped parsley before serving warm.
