Grilled Chicken with Veggie Rice & Roasted Broccoli-Cauliflower is a delightful and nutritious dish that combines tender grilled chicken with vibrant veggie rice and perfectly roasted vegetables.

  • 1 chicken breast, sliced
  • 1 cup cooked rice (brown or white)
  • 1 cup corn kernels
  • 1 cup green beans, chopped
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 tsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt & pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Toss broccoli and cauliflower with olive oil, salt, pepper, and garlic powder in a bowl. Spread on a baking sheet and roast for 20-25 minutes until golden.
  2. Season chicken breast slices with olive oil, garlic powder, paprika, salt, and pepper. Grill or pan-sear over medium heat for about 5-6 minutes on each side until fully cooked.
  3. In a pan, sauté corn and green beans with oil or soy sauce until tender. Add cooked rice and mix until heated through.
  4. Serve grilled chicken alongside veggie rice and roasted vegetables.
