1 chicken breast, sliced
1 cup cooked rice (brown or white)
1 cup corn kernels
1 cup green beans, chopped
1 cup broccoli florets
1 cup cauliflower florets
1 tsp olive oil
1 tsp garlic powder
1 tsp paprika
Salt & pepper, to taste
Instructions
Preheat the oven to 400°F (200°C). Toss broccoli and cauliflower with olive oil, salt, pepper, and garlic powder in a bowl. Spread on a baking sheet and roast for 20-25 minutes until golden.
Season chicken breast slices with olive oil, garlic powder, paprika, salt, and pepper. Grill or pan-sear over medium heat for about 5-6 minutes on each side until fully cooked.
In a pan, sauté corn and green beans with oil or soy sauce until tender. Add cooked rice and mix until heated through.
