  • 3 lbs lamb shoulder
  • 2 tablespoons olive oil
  • 1 large onion
  • 4 cloves garlic
  • 1 cup beef or vegetable broth
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Fresh mint leaves
  • Flat-leaf parsley

Instructions

  5. Cover and cook on low for 6-8 hours or high for 4-5 hours until tender.
  6. While cooking, prepare the gremolata by mixing chopped mint, parsley, minced garlic, and lemon zest in a bowl.
  7. Once cooked, shred the lamb with forks and serve topped with fresh gremolata.
