  • 1 leg quarter (bone-in, skin-on)
  • 1 tsp olive oil
  • 1 tsp dried thyme or Italian seasoning
  • Salt & pepper, to taste
  • 1 clove garlic, minced
  • Optional: squeeze of lemon
  • 1 cup green beans, trimmed
  • 1 tsp olive oil or butter
  • 1 garlic clove, minced
  • Salt & black pepper to taste
  • 1 cup baby carrots
  • 1 tsp olive oil
  • 1 tsp honey or maple syrup
  • Pinch of salt & black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Rub the chicken leg quarter with olive oil, dried herbs, minced garlic, salt, and pepper. Place it on a baking sheet and roast for 35-40 minutes until the skin is golden brown and juices run clear.
  2. In a mixing bowl, toss the baby carrots with olive oil, honey or maple syrup, salt, and pepper. Spread them on a baking sheet next to the chicken during its last 25-30 minutes of cooking. Turn once until they are tender and lightly caramelized.
  3. Heat olive oil in a skillet over medium heat. Add minced garlic followed by trimmed green beans. Cook for about 6-8 minutes while tossing occasionally until they are bright in color and slightly blistered.
  4. Once everything is cooked through, serve the roasted chicken hot alongside the glazed carrots and garlic green beans.
