  • 2 lbs beef chuck or stew meat
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced (plus extra for naan)
  • 1-inch piece fresh ginger, grated
  • 2 tbsp tomato paste
  • 1 can (14 oz) crushed tomatoes
  • 2 cups beef broth
  • 1 cup coconut milk
  • 1 tbsp curry powder
  • 1 tbsp garam masala
  • 1 tsp ground cumin
  • 1 tsp coriander powder
  • 1 tsp turmeric
  • 1 tsp chili powder (optional)
  • Salt and black pepper, to taste
  • Fresh cilantro, chopped, for garnish
  • Cooked basmati rice, for serving
  • 2 cups all-purpose flour for garlic naan
  • 1 tsp sugar
  • 1 tsp salt
  • 2 tsp active dry yeast

Instructions

  1. Season the beef with salt and black pepper. In a large pot over medium heat, brown the beef in vegetable oil and set aside.
  2. Sauté chopped onion in the same pot until golden. Add minced garlic and grated ginger; cook until fragrant.
  3. Stir in tomato paste and crushed tomatoes. Add beef broth and coconut milk; bring to a gentle boil.
  4. Mix in spices thoroughly before returning the beef to the pot. Simmer on low for at least an hour until tender.
  5. For naan: Combine flour, sugar, salt, and yeast; gradually add warm water to form dough. Knead until smooth and let rise for about 30 minutes.
  6. Preheat oven to high heat (475°F). Roll out dough into ovals, spread minced garlic on top, and bake for 5-7 minutes.
  7. Serve hot alongside curry garnished with cilantro.
