  • 4 whole fish fillets (snapper or cod)
  • 2 tablespoons olive oil
  • 1 lemon (zested and juiced)
  • 3 cloves garlic (minced)
  • 1 onion (sliced)
  • 1 bell pepper (sliced)
  • 1 zucchini (sliced)
  • 1 cup cherry tomatoes (halved)
  • Fresh parsley and dill
  • Dried oregano
  • Salt and black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Grease a baking dish with olive oil.
  3. Pat fish fillets dry; season with salt, pepper, and oregano.
  4. In a skillet, heat olive oil over medium heat; sauté onions until translucent. Add bell pepper and zucchini; cook until tender. Stir in garlic for one minute.
  5. Spread sautéed vegetables in the baking dish; place fish on top. Add cherry tomatoes, parsley, dill, lemon juice, and zest.
  6. Cover with aluminum foil; bake for 20 minutes. Remove foil; bake for an additional 5-10 minutes until fish flakes easily.
  7. Let cool slightly before serving with extra herbs and lemon wedges.
