  • 1 Can Cream-Style Corn (14.75 Ounces)
  • 1 Cup Frozen Corn
  • 1 Can Diced Tomatoes with Green Chilies (10 Ounces)
  • 1 Packet Taco Seasoning
  • 2 Cups Shredded Cheddar Cheese
  • 1 Box Jiffy Cornbread Mix (8.5 Ounces)
  • 2 Eggs
  • ⅓ Cup Whole Milk

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a cast iron skillet over medium heat, cook the ground beef until browned; drain any excess grease.
  3. Stir in the cream-style corn, frozen corn, diced tomatoes with green chilies, and taco seasoning; cook for about 5 minutes.
  4. Sprinkle 1 cup shredded cheddar cheese on top of the beef mixture.
  5. In a separate bowl, combine the cornbread mix with eggs and milk; stir until just combined.
  6. Pour the cornbread batter over the beef mixture in the skillet.
  7. Bake for 20-25 minutes until golden brown.
  8. Remove from oven and sprinkle remaining cheese on top; return to bake for another 5 minutes until melted.
