  • 1 large egg (or 1/4 cup applesauce)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup + 2 tablespoons canola oil
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 teaspoons baking powder
  • 2 cups all-purpose flour
  • 1 1/3 cups semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 375°F (190°C) and line cookie sheets with parchment paper.
  2. In a mixing bowl, whisk together pumpkin puree, egg (or applesauce), granulated sugar, brown sugar, canola oil, and vanilla extract until well combined.
  3. In another bowl, mix salt, baking soda, baking powder, and flour. Gradually add the dry ingredients to the wet mixture until just combined.
  4. Gently fold in the chocolate chips until evenly distributed.
  5. Drop rounded tablespoons of dough onto prepared cookie sheets, spacing them apart.
  6. Bake for 10–13 minutes until edges are set but centers remain soft.
  7. Let cool on wire racks before serving.
