  • 3 large carrots, finely chopped
  • 1 medium onion, finely chopped
  • 1 rib celery, finely chopped
  • 2 teaspoons Italian seasoning
  • 1 teaspoon minced garlic
  • 1 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1 pinch red pepper flakes
  • 1 lb lean ground beef
  • 5 cups low sodium beef broth
  • 798 ml canned diced tomatoes (28 oz)
  • 1.5 cups whole wheat macaroni pasta, uncooked
  • 1 cup tomato sauce

Instructions

  1. Heat canola oil in a large pot over medium-high heat.
  2. Add the chopped carrots, onion, and celery; sauté for 3-4 minutes until softened.
  3. Stir in Italian seasoning, garlic, salt, paprika, black pepper, and red pepper flakes; cook for an additional minute.
  4. Add lean ground beef and cook until lightly browned (2-3 minutes).
  5. Pour in beef broth and diced tomatoes; bring to a boil. Cover and simmer for 5-10 minutes until carrots are tender.
  6. Stir in macaroni pasta and tomato sauce; cover and cook for another 7-8 minutes until pasta is al dente.
