  • 16 oz dry orzo
  • 2 cups cooked chicken (diced)
  • 3 cups chicken stock (unsalted)
  • 1 cup heavy cream
  • 5 garlic cloves (minced)
  • 2/3 cup grated parmesan cheese
  • 1.5 cups shredded mozzarella cheese
  • 3 cups baby spinach leaves (roughly chopped)
  • 1 pint cherry tomatoes (halved)
  • Juice of 1/2 lemon
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe skillet, bring water to boil and cook the orzo according to package instructions until al dente; drain.
  3. In the same skillet, heat olive oil over medium heat, add cooked chicken, stir until heated through (about 4 minutes), then mix in minced garlic for about 30 seconds.
  4. Add drained orzo back into the skillet along with chicken stock, heavy cream, spinach, cherry tomatoes, lemon juice, parmesan cheese, salt, pepper, and Italian seasoning. Stir well to combine.
  5. Top evenly with shredded mozzarella cheese.
  6. Transfer the skillet to the preheated oven and bake uncovered for about 25–30 minutes until the cheese is bubbly and golden brown.
