  • 2 large eggs
  • ½ cup sour cream or plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 ½ cups diced peaches (fresh, canned, or thawed frozen)
  • For the Streusel Topping: ½ cup all-purpose flour
  • ⅓ cup brown sugar, packed
  • ½ teaspoon ground cinnamon
  • ¼ cup cold unsalted butter

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8×8 or 9×9-inch square baking pan.
  2. Combine flour, brown sugar, and cinnamon in a small bowl for the streusel topping. Mix in cold butter until crumbly. Chill while preparing the batter.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In a large bowl, beat softened butter with granulated and brown sugars until light and fluffy.
  5. Add eggs one at a time followed by vanilla extract and sour cream until combined.
  6. Gradually mix dry ingredients into wet mixture until just combined; fold in diced peaches gently.
  7. Spread batter into prepared pan and top with streusel mixture without pressing down.
  8. Bake for 40–50 minutes or until a toothpick inserted comes out clean.
  9. Cool for at least 15–20 minutes before slicing.
