  • 1/4 cup heavy cream
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter (for batter)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a saucepan over medium heat, melt the butter for the topping, then stir in brown sugar, heavy cream, vanilla extract, and salt until smooth. Let cool slightly.
  3. Arrange pecans in a circular pattern at the bottom of the pan and pour the caramel mixture over them.
  4. In a mixing bowl, whisk together flour, baking powder, and salt. In another bowl, cream softened butter with granulated sugar until fluffy. Add eggs one by one and stir in vanilla extract.
  5. Alternate adding the dry ingredients with milk to the wet mixture until just combined.
  6. Pour batter over pecans and smooth the surface.
  7. Bake for 35–40 minutes until a toothpick comes out clean from the center.
  8. Cool for about 5 minutes before inverting onto a plate.
