  • 1 red capsicum, cut into strips
  • 1 green capsicum, cut into strips
  • 1 medium onion, chopped
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp crushed chili flakes
  • 1 tsp ground black pepper
  • 1 tsp minced garlic
  • 1 tbsp cooking oil (vegetable or sesame)
  • 1 cup basmati rice
  • 2 cups water
  • a pinch of salt

Instructions

  1. Rinse the basmati rice under cold water until clear. In a pot, combine rice, water, and salt; bring to a boil. Cover and simmer according to package instructions until fluffy.
  2. Heat oil in a wok over medium-high heat; sauté minced garlic until fragrant. Add diced chicken and cook until golden brown (about 5–7 minutes).
  3. Add chopped onion and bell peppers; stir-fry for another 3–4 minutes until vegetables are still crisp.
  4. Pour in soy sauce, oyster sauce, crushed chili flakes, and black pepper; toss to coat evenly.
  5. Serve immediately alongside fluffy rice.
