  • 1/2 cup butter
  • 2 cups whole milk
  • 4 eggs (yolks separated from whites)
  • 1 1/2 cup confectioner’s sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tsp pumpkin pie spice
  • 1 cup pumpkin puree
  • 1 cup all-purpose flour
  • Pinch of cream of tartar

Instructions

  1. Preheat your oven to 325°F (163°C) and line an 8×8 or 9×9 inch baking dish with parchment paper.
  2. Warm the milk until lukewarm; set aside.
  3. Beat egg whites with cream of tartar until stiff peaks form.
  4. Melt butter and cool slightly. In another bowl, beat egg yolks with confectioner’s sugar, then add vanilla, spices, and melted butter.
  5. Mix in flour and pumpkin puree until combined, followed by warm milk.
  6. Gently fold in egg whites until just mixed.
  7. Pour into the prepared dish and bake for 60-65 minutes until set but slightly jiggly in the center.
  8. Cool completely before refrigerating. Cut into squares to serve.
