  • 1 1/4 cups pumpkin puree
  • ½ cup butter (room temperature)
  • 2 cups granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup milk
  • 1/2 cup cold butter, cubed
  • 1 cup light brown sugar
  • 1 cup flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9 x 13 inch baking dish.
  2. In a large bowl, whisk together flour, baking powder, salt, and spices until well combined.
  3. In an electric mixer bowl, beat butter and pumpkin puree until smooth. Add sugar and mix until incorporated. Gradually add eggs and vanilla.
  4. Combine wet ingredients with dry ingredients in three parts, alternating with milk until just mixed.
  5. For the crumb topping, mix cold butter cubes, brown sugar, flour, and spices until crumbly.
  6. Pour half the batter into the prepared dish, layer with half the crumbs, top with remaining batter and finish with crumbs on top.
  7. Bake for about 45-55 minutes or until a toothpick comes out clean.
