- 1–2 large baking potatoes (washed and cubed)
- 2 tablespoons olive oil
- 7 oz block of feta cheese
- 1 head of garlic (top sliced off)
- 1 lemon (quartered)
- Honey for drizzling
- Fresh basil for garnish
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, toss the cubed potatoes with 1 tablespoon of olive oil, thyme, oregano, salt, and pepper until evenly coated.
- Spread the seasoned potatoes on a baking sheet; place the feta in the center surrounded by the garlic head and lemon quarters.
- Drizzle the remaining olive oil over all ingredients.
- Roast for about 50 minutes or until potatoes are golden brown and crispy.
- Once out of the oven, drizzle honey over the roasted ingredients and sprinkle fresh basil before serving.
