  • 12 large baking potatoes (washed and cubed)
  • 2 tablespoons olive oil
  • 7 oz block of feta cheese
  • 1 head of garlic (top sliced off)
  • 1 lemon (quartered)
  • Honey for drizzling
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss the cubed potatoes with 1 tablespoon of olive oil, thyme, oregano, salt, and pepper until evenly coated.
  3. Spread the seasoned potatoes on a baking sheet; place the feta in the center surrounded by the garlic head and lemon quarters.
  4. Drizzle the remaining olive oil over all ingredients.
  5. Roast for about 50 minutes or until potatoes are golden brown and crispy.
  6. Once out of the oven, drizzle honey over the roasted ingredients and sprinkle fresh basil before serving.
