  • 1 tbsp lemon juice
  • 2 tsp paprika
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup plain yogurt
  • 4 cloves garlic, minced
  • 1 tbsp tahini
  • 2 cups cooked rice or quinoa
  • 1 cucumber, sliced
  • 1 tomato, diced
  • 1/2 red onion, thinly sliced
  • Fresh parsley for garnish

Instructions

  1. In a mixing bowl, combine olive oil, lemon juice, paprika, cumin, turmeric, garlic powder, salt, and black pepper. Add chicken thighs and coat well. Cover and marinate for at least 30 minutes.
  2. Preheat the grill or grill pan over medium-high heat. Grill marinated chicken for 6–7 minutes on each side until fully cooked. Let rest for 5 minutes before slicing.
  3. For the creamy garlic sauce, mix yogurt, minced garlic, tahini, and lemon juice until smooth.
  4. Assemble bowls by starting with a base of rice or quinoa topped with sliced grilled chicken and fresh vegetables. Drizzle with creamy garlic sauce.
