  • 2 large eggs
  • 1 handful fresh spinach
  • 1 avocado, sliced
  • 45 mushrooms (button or cremini), sliced
  • 1 small tomato, halved
  • 1 slice sourdough or whole-grain bread
  • 1 tsp olive oil or butter
  • Salt & pepper to taste
  • Fresh parsley (optional)

Instructions

  1. In a skillet over medium heat, add oil or butter and sauté the sliced mushrooms for about 5–7 minutes until golden. Season with salt and pepper.
  2. Add a splash more oil if needed and wilt the spinach for 1–2 minutes; season lightly.
  3. Cut the tomato in half and either roast at 400°F (200°C) for 10 minutes or pan-sear face-down until charred.
  4. Toast the slice of bread to your desired crispiness.
  5. In a non-stick pan, fry the eggs sunny-side-up or over-easy until whites are set and yolks remain runny.
  6. Assemble by layering sautéed mushrooms on toast, topped with fried eggs, wilted spinach, roasted tomato halves, and avocado slices. Garnish with parsley if desired.
